DEEP FRIED FISH

2 teaspoons [10 mL] baking powder
2 pounds [1 kg] fish fillets
2 eggs
1 cup [250 mL] milk
2 tablespoons [30 mL] oil
Oil [for deep-frying]
Into a deep-fryer, preheat frying some oil to 375°F [190°C].
Into a bowl, mix together flour, salt and baking powder.
Coat fish fillets with mixture, reserving remaining mixture.
Lightly beat eggs; beat in milk and oil.
Mix in remaining reserved flour mixture; beat until smooth.
Dip fish fillet into mixture until completely coated.
Deep-fry fish fillets until crisp and golden brown.
Drain onto paper toweling before serving.
Donald asks…
Would fries and sour cream be good?
because technically, fries are potatoes.
Nagesh answers:
People dip fries in just about everything that is a “dip”. I personally like to dip my fries in ranch dressing. A good way to eat fries with sour cream is to cook them in the oven with cheese (and already fried) bacon on top of them (kind of like nachos). Then, dip them in sour cream! Delicious. 🙂

What is pan-fried?
When you go to nice restaurant they always have pan-fried chicken or whatever. Does any type of frying not involve a pan?
Nagesh answers:
Deep-frying does not involve a pan. Pan frying is also called shallow frying, it uses less oil, and people seem to think that means less oil in the food.

Battered and fried food question…?
What is the strangest thing (be decent here!!) that you have had battered and deep fried but found to be absolutely delicious? I tried battered and fried dill pickle chips, and absolutely loved them. They were not what I chose off the menu because frankly I read the discription and thought that would be nasty, but the friend I was with tried them for the fun of it and we both ended up loving them. The restaurant served them with a mayo type dip that was really good with them too. So now, spill the beans~~ what do you like?
Nagesh answers:
Fried oreos, fried twinkies, fried pickles, rabanadas (portuguese french toast), fried broccoli, fried meatballs, fried bananas dipped in chocolate. I want some of this now ;( lol
edit: and fried mashed patatoe balls or fried mac and cheese balls omg so good.
Mandy asks…
What is shallow frying?
I’m reading a cookbook and there is a recipe that says shallow frying.. I know what deep frying is, but not shallow..
Nagesh answers:
Shallow frying is when you fry something in oil in just a pan on the stove. Don’t fill the pan with oil. I’d say if the oil comes up to (roughly) the middle of what you’re frying, that’s probably enough.
