How can i fry chicken without leaving all that blood in the pan?
I love fried chicken but, i cant stand all that blood that rises to the top of the chicken it’s disgusting.

Perhaps if you deep fried it you wouldn’t see what you’re describing. I’m with you – can’t beat the taste of homemade fried chicken (and gravy!).

Would french fries taste good in a stew?
I have some left over french fries that were deep fried. I was wondering if it would be OK to add them to a beef stew. It would be very similar to just adding potatoes. You cannot really eat left over french fries by themselves once they have been fried and then cooled down, it does not taste right.

You can do what you wish.. But im telling you right now itll make the fries very saugy and nasty, your better to cut up a potatoe so it can cook right and have a good texture an better taste 🙂

Is it true that your fried chicken is cooked when the pieces float to the surface of the oil?
I want to fry the perfect fried chicken but it always seems to be slightly undercooked in the middle.

Hi;
I fry chicken all the time. My secrets to perfect fried chicken are this. Marinate your bird in buttermilk a few hours. Make sure your oil is fresh and hot to 350 degrees before you start to fry. I use a ziploc bag and 2 cups of flour, a few tbsp’s of Tony Cachere’s creole seasoning and do a shake and bake style to coat.
I also am not scared to pull my chicken when it is perfectly brown and place it in a 9 x 13 pan and “finish” it in a 300 degree low oven to ensure that the chicken is cooked fully. It doesn’t take from the quality at all. Let me know if you try and like my tips. Good luck!!!

Do I have to fry tortillas to make a chicken enchilada casserole?
I usually fry tortillas when making a chicken enchilada casserole. I just moved into a new apartment and do not want to cook with grease. Do the tortillas need to be fried? Or is there an easier way to fry them without the grease splattering all over? Not that I make a complete mess, but is there a deep fryer to make this process easier?

You could heat them up on a skillet to make them pliable before putting the casserole together. But, I cook a lot of Mexican food and never fry tortillas for any reason. The enchilada casserole I make is where I dip a tortilla in hot (temperature wise) enchilada sauce for a few seconds to get it soft. I then put on the filling, roll up the tortilla, and set it into a baking dish. I then top a full dish with the rest of the sauce, cheese, onions, etc., and bake at 350 F for about 45 minutes or until the cheese is melted and browned.
When I make regular enchiladas or soft tacos, I just heat the plain tortillas on a griddle for about 10 seconds a side to heat them up and make them pliable before working with them. And, that’s how my local mom & pop taco shop does it, too.

I love fried noodles from the Chinese takeaway. With bean sprouts or without. I would love to make them at home. Recipe help! What ingredients do I need to buy? How do I cook it just like the Chinese, and taste as good also. Answers much appreciated!

You need a hot wok. And they do use MSG. & quite a bit of oil.
