Your Questions About Frys

Charles asks…

Anybody ever make Sweet Potato Fries?

Ive never made sweet potato fries…any tips on making them?
Shall I just make them as I would make regular french fries?
Remove the skin?
Do I fry them in vegetable oil?

Nagesh answers:

1. Peel.

2. Fries – Slice in strips as close to equal size as you can. Soak in salt water for about 20 minutes. (Helps with starch.) Drain and dry well. Deep fry.

Regular fries should be done in the same way, but should be fried twice. First time at 225 degrees. Drain. Fry again at 425 degrees for max crispness.

3. Make chips using a V-slicer. Peel, slice, deep fry in small batches, drain, salt lightly. Lot less work and just as much flavor.

This recipe comes from China the story is like this A cook was asked to serve fish(single) whose half side was deep fried and the other half was just steamed. To solve this problem the cook used a melon like fruit to wrap one half of the fish and dipped the other half in batter and deep fried this sandwich in hot oil.

Maria asks…

Listing of fried foods?

I would like to cut fried foods out of my diet. I know the common things like french fries or fried chicken but can anybody provide a link or a list of fried foods? I’m pretty sure there is some things i eat that are fried that i might not even realize

Nagesh answers:

You can fry just about anything, they even fry twinkies and ice cream and all sorts of stuff. If you are ordering off a menu, it will usually say fried or broiled or blackened or grilled etc. A good rule of thumb, if it is battered, it is usually fried. If in doubt, simply ask how the item is prepared.

Chris asks…

Why are they called chicken fried stakes?

I know chicken fried stakes are not made from beef, but they are still called chicken fried stakes.
Why?

Nagesh answers:

Chicken fried steak is made from beef.
It gets the name because the seasoned flour and the cooking procedure is just the same as doing fried chicken.
Chicken Fried Steak comes with a white gravy and a Country Fried Steak has a gravy that is more brown. Other than the gravy color they are pretty much the same.
