Your Questions About Frys

Lisa asks…

How often do you fry with the left over olive oil?

I have started deep frying with EVOO substituting it for corn oil.
But Being the thrifty ME, I re-use EVOO for the same type of food I wish to fry but I add more of it each time.
Is it bad?
How often do you use the same oil and when should you discard it and why?

Nagesh answers:

Trans fatty acids are formed when oil is heated to high temperatures. Olive oil isn’t quite as bad as corn or sunflower oil in terms of heat stability, but it is still unstable enough that you shouldn’t re-use it. EVOO in particular is more unstable than refined olive oil, because EVOO contains traces of gums and free fatty acids that can ignite at relatively low temperatures. Peanut oil is better because it contains 25% saturated fat, which lends heat stability.

For deep frying, I would strongly recommend you do not use EVOO. It’s better to use refined olive oil, canola oil, or peanut oil.

How do I make fried rice using the minute rice?

I have tried cooking the minute rice and then frying it in a pan with broth (beef or chix) and then adding some scrambled egg. This did not turn out bad but the rice is still really moist and not like fried rice at a restraunt. Would cooking the whole time in the frying pan with more broth be the key? I am not sure! Plz give me any ideas or recipes that have been tried and proven! Thank you!

How is tempura different from other fried shrimp/vegetables?

You can get fried shrimp, fried zucchini, and onion rings at non-Asian restaurants. Other than tempura dipping sauce, how is tempura different from these other fried foods?
Is the batter different somehow?

Nagesh answers:

Yup the different is the tempura batter. Food deep fried with tempura is lighter than those breaded with flour, beaten egg then bread crumbs or the process of dip in flour then dip in beaten eggs then dip in flour again. The result is the fried food like veggies , meat and seafood are so loaded and heavy with the bread and since deep fried will be soaking up the fat too. Tempura batter is lighter and you basically have flaky crispy crumbs sticking on the deep fried food. ‘

Charles asks…

How can you control the heat of boiling oil in a frying pan so that it doesn’t get over 365 Fahrenheit?

I am gonna fry some in a frying pan, how can I control the heat of the oil so that it is between 330 and 365 Fahrenheit? Besides, what oil should I use?

Nagesh answers:

Peanut oil is the best oil for deep frying. Its thicker viscosity helps it absorb more heat without coming to the smoking point. Also…controlling the heat is done by adjusting the flame (if you have gas) or the dial for your burner ( if you have electric). Keeping the heat at about just above medium and using a deep fry thermometer will help you in maintaining the right temp. Also, if you are still having trouble…use a heavier bottomed pan. A good heavy 18/10 gauge pan with an alluminum disc bottom will help the heat distribute evenly. Hope this helps you!

Donna asks…

Are you supposed to fry these?

My room mate always buys the Tyson frozen chicken nuggets and patties that have been breaded and fried and only require heating in a microwave or oven…but he re frys them again in grease for another 5 minutes…..Are you supposed to re fry them?..They always looked over cooked this way..how should they be cooked?
I tried to tell my dumb ass room mate he didn’t need to fry them..at the rate he is going he will die of heart failure before he is 22

Nagesh answers:

It’s OK to deep fry them before eating them, but I agree with you: they seem to be overcooked when they are fried in oil.
